THE MODERN ARKANSAS TABLE
With a dedication to artisan technique, creative flavors and a love of local ingredients, a new wave of Arkansas chefs is breaking away from the traditional while still staying true to their roots. The Modern Arkansas Table is a celebration of these culinary innovators, and brings 40 new-Southern recipes from their kitchens to yours. Words by Emily Van Zandt. Photos by Arshia Khan.
The Modern Arkansas Table is available in stores across Arkansas and on Amazon!
“Arkansas is where you can find barbecue ribs slicked with fish sauce, sorghum and soy sauce (page 102). It’s where Louisiana-born boudin meets Arkansas rice (page 95) and White River trout is smoked and slathered with horseradish crème fraîche (page 77). Here, French chefs serve Arkansas duck with local apples (page 88) and Arkansan chefs bake French macarons (page 126). Each dish is as familiar as it is sophisticated and fresh, like the Brussels sprouts topped with red wine-poached pear that grace the cover of this book.”
“Sure, Arkansas is not always featured on foodie “must try” and “best of” lists. To much of the country, we’re still just in the middle, just a crossroads. But I know better. You do, too. And won’t it feel good to prove those lists wrong?”
